Product Output
One of the main qualities of Bettercreme Sabor Nata is its excellent product output. Beaten at the correct temperature and at medium speed, the mix should yield up to 325%.
Storage
Bettercreme Sabor Nata is made using Rich Products' exclusive Freeze Flo technology. This natural freezing technology works by isolating and controlling the moisture contained in the product, avoiding the generation of ice crystals which harden and crack traditional frozen products. Its useful life varies depending on conditions, as follows:
Unopened package: one year in the freezer and 90 days in the refrigerator. Opened package: 14 days if refrigerated.
Beaten and mixed: 7 days if refrigerated and 5 days at room temperature.
Handling
To get maximum output without losing consistency, make sure you:
- Thaw out the product in the refridgerator 48 hours before using it.
- Shake the package well before opening it.
- Use a clean and dry recipient. Never fill the mixing bowl to more than 1/4 of its capacity. Sabor Nata needs room to rise and reach its maximum volume.
- Beat the mixture at a temperature of no more than 45ºF and no less than 35ºF.
- Always beat the cream at medium speed, and continue beating until it forms smooth peaks.
- Never refreeze after you've opened the package.

Helpful Hints
The number 1 enemy of cream is heat. Keep Sabor Nata away from heat sources such as ovens and radiators.
If you want to add liquors, essences or coloring, add them slowly as you beat the cream. Add fruit, nuts or raisins after the mixture is beaten and has risen. Add citrus fruits and yogurt once the cream is 3/4 risen.
